Some of my MOTHER's BEST RECIPE @ Wawa PJ Aranador
Heritage Restaurant. Kansi is Ilonggo version of "Linaga nga Carne
Vaca" ( beef stew) with "Sinigang" (sour soup) using local "Libas"
leaves-- a souring agent. It is mouth watering. Callos a la MadrileƱa is
Wawa's own recipe kept in the "baul" ( wooden chest) and it is as good
today. Not much secret except its long preparations of cooking the tripe
and oxtail so well, and cleaning them as well, like Wawa, my mother
did. Arroz a la Cubana is my mother's recipe of mixing ground beef and
pork together. The fried "saba" to go with it is really so Spanish. All
